Greens, Greens, Greens! This week we have been harvesting an array of beautiful, nourishing greens. After a long winter with little or no green, I am happy to have greens at every meal. I start off the morning with an egg on top of whole rye, cheese, and a pile of greens. So, don’t be overwhelmed by all the greens you’ll receive in your share this week; just shred them into your soups, put them on top of eggs, tacos, pizza, burritos, in pasta, or just enjoy a fresh salad every day. It’s time to begin eating with the season, enjoying all that Maine has to offer; and restoring all the vitamins, minerals and nutrients that may have been lost after a long winter.

Our favorite dressing these days is Caleb’s recipe for Ranch Dressing; simple and delicious. We’ve been dipping our hakurei turnips in it or slicing the turnips on a spinach salad with the dressing.
2-3 cloves garlic diced and salted with 1/4 tsp. salt (allow to sit for 10 minutes)
1 1/2 cups mayonnaise
1/4 cup apple cider vinegar
chopped fresh herbs such as chives, oregano or thyme.
Mix all together and enjoy!
