The highlight of the past week was the arrival of eleven day old ducklings to our farm. Although we think that every baby animal is adorable, we agree that the baby duck is maybe the cutest of all. We continue to harvest a multitude of greens for our farm shares, and are delighted to see tiny tomatoes, squash and peppers beginning to grow. While we’ve been busy harvesting late spring veggies, we’ve also been enjoying cooking with our greens; making spinach and shallot quiche with cheese, big salads with a mix of lettuces and other greens, topped with homemade ranch dressing (we added scallions). We also fried up Haloumi cheese (from our friends at Wholesome Holmstead) and put it in tacos with shredded Chinese cabbage on top.
